While rice cooks, season chicken breast with salt and pepper. Heat ½ tsp olive oil in a pan and grill chicken until golden brown and cooked through (≈ 5–6 minutes each side). Steam broccoli and carrot until tender but still slightly crisp. Lightly sauté capsicum in ½ tsp olive oil for 2–3 minutes. Slice avocado into thin pieces. Assemble the bowl: rice on the bottom, chicken sliced on top, vegetables and avocado arranged around the sides. Optional: drizzle a little olive oil or squeeze lemon juice for extra flavour. See more
